well there are two ways two capture the replays as avi, mov,... The best way is if your graphic card has a S-VHS output so you can record it with your DV or D8 camcorder and then you transfer to your Mac or PC through FIREWIRE and edit with Adobe Premiere, Final Cut pro,....
Another cheaper way to get your replays as avi is to download demos of screencaputure software that records your screen as avi or mov. The disadvantage is that the framerate sucks but at all you can do so with every Mac or PC.

http://www.download.com and search for screen capturing or for similiar words. I am sure that you will find something.
For editing there are also excist many demos. - just search for video editing.
