I've got the same problem again where when I quit iTunes then try to reopen it it refuses to open and it freezes my clock.

Any known fixes?

I had this problem a while back, something somehow fixed it - possibly an update along the way, then another update possibly ruined it again.

I'm running a G4 iMac 700MHz if that helps at all - with 256GB of RAM.

Have you tried doing a repair permission?  You'd be surprised how well that feature works on alot of issues.
You may also simply need to reset the PMU.  You can do a search on the apple site under the support page and do a search for resetting PMU and look under your mac model and it will give you directions.  But, are you still getting this problem?  I would try the repaid permissions 1st, then see how things go!
